Cranberry Muffins

Ingredients
- 1 1/4 cup stone-ground whole-wheat flour
- 1 1/2 cup 100% bran cereal
- 1 TB low-salt baking powder
- 1 1/4 cup skim milk
- 1/8 tsp. salt
- 3 egg whites
- 1 tsp. pumpkin pie spice of spices of your choice
- 1/2 cup unsweetened applesauce
- 3 teaspoons powdered stevia with FOS*
- 1 cup coarsely chopped frozen or fresh cranberries, unsweetened
- 1/4 cup fructose
- 1/2 cup raisins
- 1 tsp. Grated orange zest, fresh or dried
Preheat the oven to 375°F. Spray a 12-cup (12x2½-inch) muffin pan with cooking spray. In a small bowl, mix together flour, baking powder, salt pumpkin pie spice, stevia, and fructoise. In a large mixing bowl, combine bran cereal with milk until softened. Add egg whites and applesause and beat well with a large spoon. Stir in cranberries, raisins, and orange zest. Add flour mixture, and stir until combined. Spoon batter evenly into the prepared pan. Bake for 25 minutes or until lightly browned and toothpick inserted into muffin comes out clean. *Stevia with FOS is about 10 times sweeter than table sugar. Its Glycemic index is zero. Stevia comes in a powdered and a liquid form. This recipe uses powdered stevia. It holds up fine to both heat and freezing temperatures. You'll find stevia with FOS at your local health food store or you can shop via the Internet.
