Declicious Fudge Brownies

Serving Size: one 2x2 -inch square brownie
Ingredients
- Vegetable oil cooking spray
- 3/4 cup slow-cooking rolled oats
- 1/4 cup plain non-fat yogurt
- 2 TB. water
- 2 TB. stevia with FOS
- 5 TB. fructose
- 1/4 cup unsweetened cocoa powder
- 3 TB. non-sugar added apricot preserves without aspartame
- 2 egg whites plus 1 egg
- 1 1/2 tsp. pure vinilla extract
- 1/4 cup crushed pineapple, drained
- 1/2 tsp. baking powder
- pinch of salt (1/16 tsp.)
- 1/2 cup whole-wheat flour
Preheat the oven to 325 degrees Fahrenheit. Spray an 8-inch square pan with cooking spray. In a large bowl, combine oats, yogurt, water, stevia, fructose, cocoa powder, apricot preserves, eggs, vanilla, pineapple, baking powder, and salt. Mix well. Add flour and mix again. Pour batter into the prepared pan and spread in an even layer. Bake for 22 minutes. Cool to room temperature. Serve plain or with frozen nondairy whipped topping.
