Lasagna

Cook Time: 45 minutes
Serves: 12
Serving Size: 1 square, 3 x 3 inches

Ingredients

  • 2 lb. ground beef
  • 2 lb. ground pork
  • 1 (28oz.) can whole tomatoes, liquid reserved
  • 1 (12-oz.) can tomatoe paste
  • 2 tsp. minced garlic
  • 1 1/2 tsp. dried oregano
  • 1 tsp. dried basil
  • 2 cups creamed low-fat, low-salt cottage cheese
  • 3 (4-oz) pkg. shredded low-fat mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Preheat the oven to 350 degrees Fahrenheit. Cook lasagna noodles according to package directions. Drain and keep warm. Meanwhile, cook ground beef and pork in a large skillet until meat is no longer pink, and drain. Add tomatoes to the skillet, and break apart with a fork. Stir in tomato paste, garlic, oregano, and basil. Heat to boiling, lower the heat, and simmer 20 minutes. Set aside 1 cup sauce and 1/2 cup mozzarella. In a 13 X 9-inch ungreased pan,  alternate layers of noodles, meat sauce,  and cheese mixture. Spread reserved sauce and cheese mixture on top layer and sprinkle with parmesan. Bake, uncovered, for 45 minutes. Let stand 15 minutes before cutting into squares.
