Stuffed Beef Tenderloin

Serving Size: 4 oz. cooked beef tenderloin steakd with stuffing

Ingredients

  • 1 (16-oz.) beef tenderloin or beef loin roast
  • 5 ounces or 1/2 cup plus 1 TB. goat cheese
  • 3/4 cup packed fresh spinach leaves, washed and trimmed
  • 2 garlic cloves, minced
  • 1 tsp. freshly ground black pepper (optional)
  • 2 TB. whole black peppercorns, coarsely crushed

Preheat the oven to 425 degrees Fahrenheit. Using a very sharp knife, cut a slit lengthwise in tenderloin to form a pocket. Combine goat cheese, spinach, garlic, and if desired, ground black pepper, in a bowl and mix well. Spoon goat cheese mixture into the pocket. Using a larding needle, secure at 1- to 2-inch intervals with kitchen twine. Pat crushed peppercorns over the surface of tenderloin and press lightly. Place tenderloin in a shallow roasting pan. Roast for 15 minutes. Reduce the oven temperature to 325 degrees Fahrenheit. Roast for 45 minutes longer or until a meat thermometer registers 135 degrees Fahrenheit. Let rest for 5 to 10 minutes. Discard the kitchen twine. Cut tenderloin into slices of desired thickness.
